Baby FAN's birthday is approaching, this year decided to make some cupcakes for her birthday, so have been trying out recipes. Here's one that I modified myself, it tasted quite rich and moist. Yummy, going to do this for Baby FAN's birthday.
Chocolate Oatmeal Cupcakes
Ingredients & Instructions
* 1/2 cup rolled oats
* 1/2 cup butter (115g)
* 3/4 cup boiling water
* 1/4 warm milk
* 1/2 cup white sugar
* 2 eggs, beaten
* 1 teaspoon vanilla extract
* 1 cup all-purpose flour (I mix 1/2 unbleached flour with 1/2 cake flour)
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1 tablespoons unsweetened cocoa
* 75g normal eating dark chocolate
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch pan.
2. In a large bowl, melt butter with dark chocolate. Then mix rolled oats, boiling water and warm milk. Set aside to cool.
3. Beat together the sugar, eggs and vanilla; add to cooled oat mixture and mix well.
4. Sift together the flour, baking soda, baking powder, salt and cocoa. Add to wet ingredients and mix well. Pour into cupcakes cup.
5. Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes. Remove from oven, allow to cool, and remove pan.

Homemade Baby Food: Baked Beans with Pork

- Wash, peel and cut the carrot, potato and onion.
- Heat the oil, add the pork and fy for a few minutes, until slightly brown (about 70% cook). Put aside.
- On the same pot, add the vegetables and cook for 2 minutes, then add the baked beans and water.
- Bring to boil, then cover and simmer until vegetables become tender.
- Pour the mince pork back to the pot together with the tender vegetables and cook for another few minutes until pork is fully cooked. Don't cook for too long or the pork becomes very tough.
- Puree the food to desired consistency and served. Freeze the remainder.
Homemade Baby Food: Avocado Soup
Saw some really nice avocados, so bought some for Baby FAN to try as a finger food. She seems to like it though she can't eat a lot, so have some left over avocados which I dunno what to do with it. So dig through my recipes and found this avocado soup recipes that I used to cook for SMALL FAN quite often. Well, SMALL FAN stills likes it and so did Baby FAN..yum

Avocado-Spiked Corn Soup
Ingredients & Directions
- 1 cup of corn
- 2 avocados
- 1/2 an onion
- 1/2 a carrot
- 1/4 cup of celery
- Salt & Pepper & Basil to taste
- Cook onion, carrot, celery and corn in some chicken broth until all the ingredient are soft.
- Cool and puree all the ingredient.
- Add avocados and puree it with all the ingredient
- (for Baby and SMALL FAN I add 1 small piece of chicken meat and puree with the rest of the ingredient for the protein)
- Pour all the puree mixture into the saucepan warm it, add water, salt, pepper and basil to taste (for Baby FAN, I omit the salt, pepper & basil as it's actually tasty enough on it's own). For water, just add base on your own preference, if you like it thick, less water. Serve Hot.
